Method:
For making paneer :
• Take milk in a pan and boil it.
• Mix same measurement of vinegar and water in a bowl.
• When milk started boiling add vinegar and water mix into it and stir the milk continuously.
• Now close the flame and keep aside it for 10-15 minutes.
• After 15 minutes strain the paneer in a strainer and remove the extra water from it.
• Pour one glass clean water over paneer and press it properly.
• Now paneer is ready for making Malpua.
Method :
For making sugar syrup :
• Add equal quantity of water in it.
• Then heat it in medium flame and stir it continuously.
• We don't need any string consistency sugar syrup for making Malpua.
• When sugar syrup started boiling after that boil it for 2 minute in slow flame.
• After 2 minutes close the flame and add cardamom powder in sugar syrup.
• Then cover the sugar syrup and keep aside.
Method :
For making chana Malpua :
• Take paneer in a blender jar.
• Add half cup boiled milk in paneer and blend it.
• After blending take paneer paste in a bowl.
• We need pouring consistency batter for making paneer malpua.
• Add refined flour in paneer and mix it.
• Then add boiled milk, green cardamom powder and dry fruits in paneer batter.
• You can take dry fruits as per your choice.
• Then add ¼tsp baking powder.
• You can add baking soda instead of baking powder also.
• Beat the batter for 1 minute properly.
• Heat oil or ghee in medium flame.
• Add 1 tsp paneer batter for each malpua in hot oil.
• Must use flat surface Pan for frying Malpua.
• Fry malpua in low medium flame till it turns to light golden brown colour.
• After 1 minute change it's side.
• Fry malpua in slow medium flame, rather than it will not cook properly.
• When malpua change its colour then remove it from oil and add it in lukewarm sugar syrup.
• Dip it for 10-15 minutes in sugar syrup.
• After 15 minutes take malpua in a plate.
• Now malpua is ready for serving.
