Yellow gram (toor dal) contents folic acid, that is very essential for pregnant women. In every launch or dinner we have to take one small bowl toor dal, It is very good for all ages people. In this recipe we will make amti with toor dal. Amti's making process is completely different from dal fry. Because we add jaggery and dry mango pulp in amti, so it gives a delicious taste like "sour and sweet".
Ingredients : 1 cup boiled tur dal (with turmeric powder and salt) 2 tomato 4/5 tbsp grated fresh coconut 2 tbsp oil 1 tsp cumin seeds 1 tsp mustard seeds 10/12 curry leaves 2 tbsp goda masala ½ tsp chili powder 2 piece dry mango 4 tbsp grated jaggery Coriander leaves Salt as per taste
Method : how to make 1 - Wash 1 cup yellow gram (tur dal) and take it in cooker. Add 1 tsp turmeric powder and 1 tsp salt in it. Cook it in medium flame till 1 whistle comes. Then close the flame. Now yellow dal is ready for making amti. 2 - Take refined oil in a pan, heat it in medium flame.
3 - Add cumin seeds, mustard seeds, curry leaves and garam masala in hot oil. Stir it for 5-6 second.
4 - After 6 second, add tomato, chilli powder, grated fresh coconut and salt in it. Mix it properly, then cover the pan for 4-5 minutes in slow flame till tomatos become soft.
5 - Then add boiled dal, dry mango, jaggery and salt as per taste. 6 - Boil it for 1 minute. After 1 minute close the flame and add coriander leaves in it. Then mix the dal properly.
7 - Amti is ready, now take it in a bowl. you can serve it with rice or roti. Watch video :
Chirote is a crispy, dry, sweet snacks. It also known as khaja or gaja. Maharashtra word chirote is known in Bengal as khaja and in Orissa as "gaja". This sweet is a famous Prasad in Puri Jagannath Dham. This crispy sweet is very easy to prepare and very delicious in taste. It is prepared with refined flour and coated with sugar syrup. It made with minium ingredients. Try out my easy version of making sweets chirote at home and you must like it.
Ingredients : 2 cup refined flour ½ cup refined oil Water as needed Oil for frying For sugar syrup : 1 bowl sugar ½ bowl water ½ tsp green cardamom powder 1 tsp lemon juice Method : how to make 1 - Take refined flour in a plate and add oil in it. 2 - Then add water step by step, knead it properly and make a soft dough. 3 - After kneading cover the dough for 15 minutes and keep aside.
4 - For making sugar syrup take one bowl sugar and half boil water in a pan. 5 - Boil it in medium flame stir continuously. 6 - Add 1 tsp lemon juice in it. 7 - We need one string consistency sugar syrup for chirote. 8 - When sugar syrup comes to one string consistency, close the flame, add green cardamom powder in it. Cover the syrup and keep aside.
9 - After 15 minutes divide the dough in 3 part. 10 - Take some dry flour, make round shape ball in dough, roll it in a rolling pin and make a thin roti. Make all three roti in same process. 11 - Then take 2 tbsp ghee in a bowl. Mix 3 tbsp refined flour in it. Mix it properly and make a smooth paste. 12 - Add 2 tbsp ghee flour mix over a roti. Spread it properly. Keep 2nd roti over it. Then add again the mix over 2nd roti. Arrange all three roti in same process. 13 - Now make roll with these roti. Cut it ½ inch piece in width.
14 - Take a piece and add some dry floor over it then roll it in a rolling pin. 15 - Roll all the pieces in same process. 16 - Heat oil in medium flame. We need lukewarm oil for frying chirote.
17 - Then add one by one pieces in lukewarm oil and fry it till it turns to light golden brown colour. 18 - After turns to light golden brown colour take all the pieces in a plate. 19 - Dip it in sugar syrup for 5-6 second. Then take it in a plate. 20 - Now chirote is ready for serving, you can also store it in a air tight container above 15 days. Watch video:
Masala bhaat is recipe of Maharashtra, which is the mixture of spices, vegetable and rice. Adding different types of vegetables makes the rice healthy. It is generally served for breakfast or lunch. And it is also a tiffin box or lunch box recipe. Ingredients : 2 cup rice 6 tbsp oil 3 onion 1 capsicum 1 bowl cauliflower (cut) 1 carrot 2 tomato 3 green chilli ½ tsp coriander powder ½ tsp roasted cumin powder 1 tsp goda masala ½ tsp turmeric powder 1 stick cinnamon 2 cloves 2 green cardamom 8/10 curry leaves Salt as per taste Method : how to make 1 - Heat a pan in medium flame. Add oil in it.
2 - Then add green cardamom, clove, cinnamon stick, curry leaves, onion, coriander powder, cumin powder & goda masala in hot oil. Stir it for 6/7 second. 3 - Add capsicum, carrot, cauliflower and salt. Mix all vegetable properly and cook it for 2 to 3 minutes in medium flame.
4 - After 3 minute add green chilli, tomato and grated fresh coconut in vegetable. Stir it for 1 minute. 5 - Then add rice in vegetable and cook it in medium flame, till vegetable and rice become dry. 6 - Then pour double measurement of water in rice (4 cup water for 2 cup rice). Mix it properly.
7 - Cover the pan for 5 to 6 minut in low flame. After 6 minutes open the cover of the pan, mix it, take the rice in a bowl and serve. 8 - Masala bhat is ready, you can serve it with raita or pickles. Watch video :
