Homemade sweet boondi

Sweet boondies are mouth watering delicious snacks and dessert. Sweet boondies are used for making "laddu" the traditional sweet of India. People love boondi laddu in every festival or occasion like marriage, fasting festival, celebration etc. It is the small fry drops made by gram flour batter. Sweet boondi are always favourite in my family. 

Every person make this recipe with their idea. But in this recipe you find a simple process to making sweet boondi at home just like readymade boondi.


Ingredients :

For boondi batter
1 bowl gram flour (besan)
2 tbsp oil
Water for batter as needed

For sugar syrup :

1 bowl sugar
½ bowl water
½ tsp green cardamom powder

Method : how to make :

1 - Take 2 cup gram flour in a bowl, add water in it, then beat it. 
2 - Add 2 tsp oil in batter & beat it properly and make it smooth batter. The batter should be lump free and remember one thing the better should not be too thin. We need pakoda consistency batter for making boondi.

3 - Whisk the batter for 2 to 3 minutes till it becomes smooth. Then cover it for 15-20 minutes.
4 - For sugar syrup making take 1 bowl sugar in a pan and pour ½ bowl water in it. Boil it in medium flame. We need one string consistency sugar syrup for boondi.

5 - It takes 5 to 7 minutes in medium flame for making sugar syrup. When sugar syrup become one string consistency add cardamom powder in it, mix it properly and keep aside.
6 - Now take refined oil in a plan and heat it. Pour on drop of batter in oil per checking is the oil is hot or not. We need hot oil for making boondi.

7 - Then hold a  perforeted spoon over oil and pour 3-4 spoon batter in it.
8 - Tap the edges of the spoon to allow small droplets to fall into the pan. Fry it till it become crispy and turn to light golden brown colour.

9 - You can add different colour in batter for making colourful boondi as per your choice.
10 - After frying pour boondi in lukewarm sugar syrup. If the sugar syrup is cool then again heat it and make lukewarm.

11 - Mix properly boondi and sugar syrup. Then cover it and keep aside for half an hour.
12 - After half an hour take boondies in a plate, mix dry fruits as per your choice. Boondi is ready for serving.

13 - You can serve boondi after any meal, lunch or dinner. Even children love to eat boondi with Puri or chapati. You can store it in air tight container for one week.
